Galito's Mild Peri-Peri Sauce

Galito’s Famous Sauces and Flame Grilled Chicken restaurants first opened in
South Africa in 1996. Their flame-grilled Portuguese chicken has been a great success. Today, there are 12 Galito’s restaurants and more on their way. Galito’s South Africa has teamed up with Galito’s USA to bring this authentic Peri-Peri sauce to the U.S.

Peri-Peri means “pepper pepper” in Swahili. This specific pepper referred to is the
African Bird’s Eye Pepper. This fiery pepper is very small and can be found in African and Portuguese cuisine. The pepper was carried back by Portuguese traders to Angola and Mozambique, and then ultimately to Portugal.

Use with chicken, beef, pork, vegetables, chili, soup, etc. It can be used as a condiment, a marinade, or an overall flavor enhancer.

Hot and Spicy Peri-Peri Sauce
Galito's Hot Peri-Peri Sauce

Galito’s has combined this red hot pepper and packed it with flavor. The heat in the Peri-Peri sneaks up on you only after the intense flavors of lemon, garlic & herbs have paved the way. The result is that you just can’t get enough!

Pizza oven

Lest anyone accuse me of being a careless writer, I am well aware there should be a question mark after the word “pizza” in the headline of this post.

However, I chose an exclamation point because I am making a statement;
an emphatic one, at that. Everyone loves pizza!

If, by some chance, you don’t like pizza - please don’t tell me about it. I don’t want to hear about your wheat allergy, dairy intolerance, allergy to tomatoes and dislike of pizza toppings.

Just humor me and pretend for the duration of this post that all is well in Pizza Land and we all adore it…m’kay?

I think I’ve talked about my thrilling life in Italy ad nauseum, so I suppose I’ll bypass my extensive sermon on whose pizza is better: Italy vs. the U.S. I think you can guess where I stand on the topic.

Hint: it’s pretty safe to assume that I prefer a thinner, crisper crust, less sauce, and only a smidgen of cheese.

Give me an authentic Pizza Margherita, and here’s my facial expression: :-D

Give me a spongy, heavy, sauce-drenched, greasy pile of mushy goop called a pizza,
and not only will my face grimace as such:  , but you better duck because you might be covered in sauce and pepperoni in less than two seconds flat.

Now that we’ve gotten that out of the way…I’ve heard great things about this incredible pizza contraption -

Outdoor Artisan Pizza Oven, by Kalamazoo Gourmet

Per their site…

Ovens lined with stone and topped by an arched roof are found across Italy for baking pizza and bread. Why? The stone delivers superior heat transfer characteristics and the low, arched top reflects radiant heat back to the pizza for even baking from both the top and bottom.

Kalamazoo Outdoor Gourmet has taken this classic design and updated it for worry-free outdoor use. The Outdoor Artisan Pizza Oven is hand fabricated entirely of stainless steel. The countertop design is a perfect addition to your outdoor kitchen.

The baking surface is a professional composite baking stone. Its heat transfer performance exceeds that of natural stone, and it will never become brittle like quarry stone can after repeated heat cycles. The precision digital thermometer measures the temperature of the stone so you can do both low-temperature deep-dish pizza and high-temperature thin-crust pizza with equal confidence.

The convenience of the 30,000 BTU stainless steel gas burner means the oven is always at the ready, while the integrated smoking drawer imparts the flavor of a wood-fired pizza oven.

Start a tradition at your home of baking artisan pizza in your backyard! Thick or thin crust, pan pizza or stuffed, even calzones or artisan bread… The Outdoor Artisan Pizza Oven helps you cook like a seasoned professional.

I’m certainly ready! :-D

Let’s get our week off to a tasty headstart as we in the U.S. gear up for our exciting
Independence Day festivities this week.

Nothing says “4th of July” quite like the El Paso Chile Company. This company has everything to make your outdoor cookout anything but dull!

Take, for instance, their Beer BBQ sauce…

Beer BBQ
A hearty American Bar-B-Q sauce, tapped with dark beer, Texas mesquite smoke and molasses for a rich, smooth character. Pour it out, rub it on, eat it up!

I love beer BBQ sauce! Beer adds a whole new taste dimension when added to an already kicky BBQ sauce. You’ve gotta try it!

Cowboy Catsup
Cowboy Catsup
Rope your burgers and fries and slather on some of this jalapeño catsup. Onions, hot peppers, bell peppers and garlic add a kick to the tradition of catsup in a spicy, Southwestern style.

Now THIS is different - Mediterranean Salsa!

Mediterranean salsa
The stuff that myths are made of! Italian sun-dried tomatoes, Greek kalamata olives and capers, French Herbes de Provence, red roasted peppers and chipotle chiles are embraced in an impassioned mosaic of tempestuous flavors and colors.

Cuban Black Bean Dip

Cuban black bean dip
Waving palms and a cool island breeze. Visit a forbidden paradise of silky black beans, sweet red pepper and an undercurrent of rich authentic gold rum, resulting in a Cuban sensation that may taste mild, but is definitely hot, hot, hot!

Mexican Wedding Cookies

Mexican wedding cookies
It’s got to be love at first bite with our simple, but delicious Mexican Wedding Cookies. Traditionally, these treats are given to guests attending the bride and groom’s happy day, but we think they are so good that it’s a shame to only serve them at special occasions. Just try one and you’ll agree, there’s nothing better than these yummy pecan cookies rolled in sweet powdered sugar. Definitely a match made in heaven.

Margarita Cookies!

Margarita Cookies
Little bites of heaven…each delicious cookie is infused with the juice of tart key limes, crushed almonds and then baked to flaky perfection. A dusting of fine powdered sugar puts the finishing touch on these sweet babies.

Mmm… Dulce Pecan Sauce

Dulce sauce
A perfect sauce for topping Dulce Cake or premium ice cream. Rich, smooth and totally delicious. Made with pecans and laced with Madagascar vanilla!

I’m psychic. In my crystal ball, I see a vision of El Paso Chile Company being inundated with gazillions of express orders just in time for the holiday. :-D

Guava Rum

I was nebbing around the Walkerswood Jamaican cooking products site and was happy to see that they are introducing a new product: Guava Rum BBQ Sauce!

Blended with guavas, scotch bonnet peppers, spices, and premium Jamaican rum, Guava Rum BBQ Sauce is an exciting twist on Walkerswood’s existing BBQ Sauce, adding a tangy edge to any meal. Goes perfectly with chicken, steak, pork or vegetables….A perfect opportunity to introduce the Caribbean taste to your BBQ!

However, Walkerswood is currently out of stock of this new sauce. It must be so good that it goes that fast. :-(

I tried sleuthing the Internet, but no such luck in finding an alternate supplier of it.
I say do one of two things:

1. Contact Walkerswood and demand that they make their workers hustle overtime to get this BBQ sauce to us.

2. Wait patiently and keep checking back on the Walkerswood site to see when it’s available.

I’m sure it’s worth the wait! :-D

Caribbean Jerk Seasoning

If you love the savory, spicy flavor of Jamaican jerk chicken, meat, and fish but don’t have access to authentic Jerk seasonings in your area, or just don’t have time to order these spices online, I want to mention what will do in a pinch…

Believe it or not, McCormick Caribbean Jerk Seasoning makes really good jerked meat and fish! Again, I realize this McCormick stuff is not authentic Jamaican seasoning, but for those living in the middle of nowhere who want to have an idea of what the rest of us are enjoying - it’s a good pick. Most grocery stores carry it.

I love this jerk seasoning! It’s a nice balance of spicy and sweet. The sugar in this McCormick seasoning mix caramelizes so nicely on your meat and fish. All you do is sprinkle and rub your meat and fish down with the seasoning and throw it in the broiler or on the barbecue.

I should warn you that if you’re going to use this product and broil your meat and fish in your kitchen, OPEN THE WINDOWS and leave the broiler door open. It truly smokes!

Better yet, fire up the grill and get busy! :-D

I must really love you guys and chicas to part with a recipe from my beloved recipe collection!

I’m just trying to do my best to help you along with your Memorial Day party plans so you won’t have to make that same old tired food this year.

This was originally a Hellmann’s Mayonnaise recipe, but I have worked and
re-worked this recipe until it suited my taste, as well as my family’s taste. They know this recipe well!

Double the ingredients as your guest list grows.

Herbed Potato Salad

Serves 4

6 red potatoes, cooled and cut into small quarters (with
skins on)
1/2 cup bottled Italian salad dressing
1 cup Hellmann’s Mayonnaise
1/2 cup Hellmann’s Dijonnaise Mustard Blend
3 hard-boiled eggs, chopped, with yolks discarded
1 green bell pepper, chopped
1/2 cup red onion, diced fine
1/4 cup dried parsley flakes
1 teaspoon dried dill weed
pinch of fresh basil, torn
pinch of fresh oregano, torn
1/2 teaspoon McCormick Seasoned Salt
1 teaspoon white pepper
1 Tablespoon sugar
1 teaspoon Worcestershire sauce

Toss cooled potato quarters (with skins on) in Italian dressing and set aside.

In another bowl, stir remaining ingredients until combined.
Pour dressing over potatoes and toss gently to coat. Cover; chill.

Yummy. :-)

BourbonQ Classic Kentucky Barbecue Sauce

BourbonQ Classic sauce has warmed the hearts of rib connoisseurs worldwide since 1990.

Having won world championship rib competitions, as well as a host of local and regional titles and awards, this recipe harkens to the company’s beginning days in barbecue. With the heartiness of its smoky worcestershire, vinegar, and authentic
Kentucky bourbon base, this basting sauce will open the doors of barbecue to the novice, and endear itself to the “Old School” barbecue masters as well. Always a winner you can count on!

BourbonQ Barrel Select Grilling Sauce

BourbonQ Barrel Select is a more sophisticated, top-shelf grilling sauce for chicken, fish, steaks, ribs…even scrambled eggs!

Beginning with a sweet note, Barrel Select leads you through a cascade of flavors, bouncing from fresh garlic, caramelized onion, and the earthy essence of worcestershire and Kentucky bourbon. This blending of flavors is perfectly balanced with the unexpected and ever-so-subtle arrival of spicy habanero peppers.

BourbonQ Gold Reserve Barbecue Sauce

BourbonQ Gold Reserve is an exclusive, coveted recipe that is not to be served to
just anyone. This upper-echelon BBQ sauce definitely holds its own with an elite crowd.

Robust in its base of tomato and worcestershire, BourbonQ Gold Reserve is a mix of subtle and bold flavors that are intent on wooing you. The smoky note and heat of chipotle merges and vies for your affection over the hearty flavor of roasted garlic and is finished off with a touch of real Kentucky bourbon. This is a richly distinguished, seductive condiment for anything grilled!

As for its credibility as a jammin’ BBQ sauce maker…

Kentucky BourbonQ brand is the proud recipient of two 2003 National BBQ Association Awards of Excellence and two 2001 National BBQ Association Certificates of Recognition for their sauces and spices. In addition, they are the 5-time People’s Choice Award Champions for Best Ribs in Blue Ash, Ohio, as well as Best Ribs Award Winners for Best in the Smoky Mountains (1999) and the Hog Wild BBQ Jam (1999).

Mojo

Years ago, in my culinary heyday, I came up with the most amazing chicken marinade that I made by mixing citrus juices with garlic and EVOO (extra-virgin olive oil).

I didn’t know then that it had a name, but now I realize that it was similar to a Cuban-style marinade, mojo criollo. My family LOVED this chicken!

Now that summer is fast-approaching, I realize some of you are itchin’ to try some new, fabulous grilling recipes. Never one to deprive my readers, I decided to do a feature on the best marinade in the world. Don’t you just love me? :-)

Here in L.A., Versailles Cuban Restaurant makes a nice, tangy, very garlicky mojo chicken. It’s served with a side of Cuban black beans and rice and fried plantains
(that are a little on the overcooked side, but hey).

Versailles’ garlic chicken is a bit extra-tangy, but believe me when I say you’ll get used to it and will even have a craving for it later. How they get that chicken skin so perfectly crispy is beyond me!

For your grilling pleasure, I found this kickin’ recipe on RecipeZaar:

Mojo Criollo

1/4 cup lime juice, fresh squeezed
1/2 cup orange juice, fresh squeezed
1/2 cup olive oil
1 teaspoon dried oregano
6 garlic cloves, pressed
salt, to taste
black pepper, fresh ground, to taste

1. Add all ingredients to a small jar, cover and shake for 2 minutes.
2. Adjust salt and pepper to taste.
3. Use as a marinade for meats and poultry.

Or if you’re lazy like me and prefer an already-made mojo, click this pic to order yours:

Goya Mojo Criollo, 24 oz

You’ll want to kiss me after you taste this marinade. Hey, don’t kiss me…just invite me over for dinner.

I’ll bring the Cristal brewskis!

I am huge on condiments. Seriously. I don’t do dry, bland food unless I’m sick, which is hardly ever.

In my mind, food is supposed to be tasty, zesty, intriguing, and lively. Then again, this may be a cultural thing. All I know for sure is I need my spice. ;-)

Spices and condiments give food that extra oomph, which really amps up the dining experience. I laugh at most “hot” food! I have developed a fierce palate that can endure ridiculous amounts of insane heat. Your standard Tabasco sauce just doesn’t do it for me.

Thus began my online quest for awesome condiment dealers…my drugs of choice.

Penzeys Spices is a great company that has been around for a while. They have a lovely little catalog (complete with yummy recipes) that will have you salivating just like
Pavlov’s dog.

Duck

About the only spice mix I haven’t seen on the Penzeys site is Jamaican curry powder. But that’s what Walkerswood is for!

Walkerswood is THE Jamaican standard for authentic jerk seasonings, jerk marinades, coconut rundown sauce, escoveitch sauce, curry powder, etc. Walkerswood has a sterling reputation.

Walkerswood

Hot Sauce Blog is a fun, informative site on the world of fiery hot sauces. The site’s creator, Nick Lindauer, says, “If it’s Not Here, it’s Not Hot Enough!” Nick knows hot! There are pics of Nick on his site clearly illustrating his gutsy pepper endurance. He’s a brave soul!

Hot Sauce World is where I go to order my specialty condiments. They carry EVERYTHING. You want BBQ sauces, salsas, mustards, spice rubs?
Hot Sauce World has it.

Garlic Valley Farms
has an interesting product: bottled garlic juice. Yes, juice. Their theory is the flavor is not in the pulp of the garlic clove; it’s in the liquid. They have gotten great reviews all over the Internet. They even feature a roasted garlic juice product. Garlic Valley Farms has an incredible, yet simple recipe for garlic bread on their site.

Garlic Valley Farms

If you’re craving Cajun and Creole food but don’t have access to it in your neck of the woods, Tony Chachere’s has some nice basic spice mixes and such.

Cajun Grocer is a pretty comprehensive site that carries a bit of everything Cajun, including sauces.

Do check out my Blogroll and links in the sidebar on your right, as I keep it updated regularly with interesting finds.

You never know what you might be missing!
